Antipasto Pasta Salad

Fourth of July is next week! I have the perfect side dish for your upcoming parties and cookouts! I love it because it lasts for days and  goes great with any meal. Bring it to your next summer cook out party, I promise it will be a huge hit! Enjoy 🙂

  • 1 lb box of noodles (bow tie, penne or corkscrew are always a good choice!)
  • 1 red pepper
  • 1 green pepper
  • 1 can of large pitted black olives
  • 1 package of sliced provolone cheese
  • 1 package of sliced pepperoni
  • 1 package of sliced salami
  • 1 cup of greek or italian salad dressing

Cooking Instructions

Step 1 – This recipe requires a lot of chopping so I always get the water for the pasta ready and on the stove first and then go straight into cutting up the ingredients.

Step 2 – Cut top of green pepper and deseed. Cut in half long way and slice halves into strips. Dice strips in medium chucks. (Repeat with red pepper) Place all ingredients in a large bowl (you will use this bowl to serve the pasta salad).


Step 3 – Stack provolone cheese slices and cut into strips. Then cut strips into medium size cubes. Make sure to separate the cubes before placing in ingredients bowl.


Step 4 – Don’t forget about the pasta! Usually around this step the water on the stove is boiling and ready for the pasta to be dropped in. Set timer for appropriate time listed on pasta box and stir occasionally. Now back to chopping!


Step 5 – Stack salami slices and cut into strips. Then cut strips into medium cubes. Make sure to separate cubes before placing in ingredients bowl.


Step 6 – Stack pepperoni slices into multiple short stacks. Slice into long strips. Make sure to separate strips before placing in ingredients bowl.


Step 7 – Open olives and drain. You can either place olives whole into the salad or cut. I prefer to slice them. Your choice!


Step 8 – DONE chopping (yay!) Your pasta should be close to done, if not done already. Transfer pasta into a strainer and rinse with cold water to cool.  (If you do not cool off pasta, your cheese will melt when you add ingredients)

Step 9 – Put pasta back into the bowl you used to cook the pasta and then add ingredients.

Step 10 – Measure out 1 cup of salad dressing and add to bowl. IMG_3081

Step 11 – Mix, mix, mix! Make sure you get all the pasta from the bottom mixed with all the veggies, meat and cheese from the top. Transfer pasta salad back into the bowl you used to hold all the ingredients while chopping and you are done!


This dish can be served immediately or can be prepared early and chilled in the fridge over night. (It actually tastes better if you let it sit the fridge overnight because all the flavors blend and get enriched!)
