I am on this new kick of creating my own new recipes. So today I wanted to share my newest creation, oven baked chicken fajitas! It turned out great and was easy to make which is what I am always striving to achieve in the kitchen. Enjoy!  🙂

What You Will Need

  • 1 Pound of boneless chicken cutlets (thin sliced)
  • 1 Onion
  • Peppers ( I used three peppers, but one or two will work too!)
  • Jalapeno pepper (optional- use only for extra spicy)
  • Fajita seasoning packet (I used an Old El Paso mix)
  • 1/2 cup of water (for seasoning packet)
  • Tortillas
  • Toppings (cheese, salsa, guacamole, tomatoes, sour cream)

Cooking Instructions

Step 1 – Preheat oven to 400 degrees.

Step 2 – Slice chicken cutlets into thin strips.

Step 3- Place chicken strips into greased 13 x 9 baking dish.

Step 5- Carefully spoon entire mix over chicken.

Step 7 – Discard both ends of the jalapeno pepper and cut remainder into thin slices.

Step 10 – Put in oven uncovered and cook for 30 minutes or until chicken is cooked and all veggies are tender.

Step 11 – Spoon serving of chicken and veggies into a tortilla and top with desired toppings and enjoy!
