Oven Baked Chicken Fajitas

I am on this new kick of creating my own new recipes. So today I wanted to share my newest creation, oven baked chicken fajitas! It turned out great and was easy to make which is what I am always striving to achieve in the kitchen. Enjoy! 🙂

What You Will Need
- 1 Pound of boneless chicken cutlets (thin sliced)
- 1 Onion
- Peppers ( I used three peppers, but one or two will work too!)
- Jalapeno pepper (optional- use only for extra spicy)
- Fajita seasoning packet (I used an Old El Paso mix)
- 1/2 cup of water (for seasoning packet)
- Tortillas
- Toppings (cheese, salsa, guacamole, tomatoes, sour cream)
Cooking Instructions
Step 1 – Preheat oven to 400 degrees.
Step 2 – Slice chicken cutlets into thin strips.
Step 3- Place chicken strips into greased 13 x 9 baking dish.
Step 4 – Combine fajita seasoning packet with 1/2 cup of water. Stir until mix is completely dissolved.
Step 5- Carefully spoon entire mix over chicken.
Step 6 – Cut top off pepper, cut in half and de-seed. Then cut each half into long thin strips. (Repeat process with any additional peppers being used)
Step 7 – Discard both ends of the jalapeno pepper and cut remainder into thin slices.
Step 8 – Cut off both ends of the onion and peel off outer layer. Cut in half and slice each half into long, thin strips. ( I only used one half of the onion, but a whole onion can be used.)
Step 9 – Place all vegetables on top of chicken and stir all together.
Step 10 – Put in oven uncovered and cook for 30 minutes or until chicken is cooked and all veggies are tender.
Step 11 – Spoon serving of chicken and veggies into a tortilla and top with desired toppings and enjoy!
