Quick and Healthy Breakfast Oatmeal Cookies

Let me begin by saying I do not bake. I do not enjoy baking. I am not good at baking. End of story. SOO when I found a cookie recipe that was easy, quick AND healthy I was sold. I tweeked things around for my taste and am proud to say I can make a pretty good cookie. These cookies can be  eaten for breakfast and would be an awesome way to get the kids out of bed, fed and out the door on time to get on the school bus. Enjoy 🙂

Breakfast Oatmeal Cookie

  • Two bananas – the older the better since they will be smashed.
  • 1 cup instant oatmeal
  • 1 tablespoon vanilla
  • 1 large spoonful peanut butter
  • Chocolate chips – Optional or could be substituted for coconut, nuts, peanut butter cups, raisins.

Step One- Preheat oven to 350 degrees.

Step Two- Peel bananas and place in mixing bowl. With a fork, smash bananas until there are no clumps and it looks like baby food.


Step 3- Add 1 tablespoon of vanilla and large spoonful of peanut butter.


Step 4- Add one cup of oaks and mix, mix, mix!

IMG_3796Step Five-  Now add the chocolate chips. In my opinion, there is no such thing as too much chocolate, the more the better. You are judge here. You can add them to the mixing bowl or you can monitor how many chips are in each cookie by adding them to the top of each cookie once on the baking sheet.

Step Six- The oven should be ready and heated to 350 degrees. You will need to grease your baking sheet or the cookies will stick. PAM baking spray works or you can do it the old fashion way by spreading butter over the pan. With a spoon, scoop mixture on to the baking sheet. You may have to use your hands a little to make each scoop into a cookie shape. Just make sure when placing scoops on the sheet you do not press and smash them down. They do not have to be a perfect circle.

Step 7- Bake for 15-18 minutes and allow to cool for a few minutes before taking off the baking sheet. These cookies taste amazing hot and are equally as good if eaten at room temperature the next morning.
